Dried Lime Whiskey Sour

I clearly have a thing for whiskey sour! If you're a whiskey drinker you definitely ordered this cocktail at a bar before. A perfect balance of sweet and sour with a soft pillowy texture from the egg white. One of the main debate is to add the egg white or not. Egg white gives this cocktail such a smooth texture that I personally can't skip it.

Enough with whiskey sour, what makes this cocktail special (at least to me) is the dried lime. Dried lime also known as Limoo Amani is a specific kind of lime which dries after several days and is a staple in Persian cuisine. Dried lime is sour, aromatic and it has a funky fermented notes which can't be found in fresh lime. To using dried lime is best to soak it in water for couple of hours so the shell become slightly soft.

The flavor and and smell of Limoo Amani added a really bold zing to this cocktail making it super unique to me.


Note: This recipe will make two cocktails and you can keep the rest of simple syrup in an airtight container for up to a month.



Ingredients for two cocktails:


For dried lime simple syrup:

  • 1 cup water

  • 1 cup sugar

  • Four large dried limes


For the cocktail:

  • 2 1/2 oz bourbon

  • 1 1/2 oz freshly squeezed lemon juice

  • 1 oz dried lime simple syrup

  • 1 egg white


Instructions:


For the simple syrup:

  1. Soak the dried limes in water for couple of hours or until there are slightly soft.

  2. Place water, sugar and dried limes in a small sauce pan.

  3. Bring it to boil over medium heat and let it boil for a couple of minutes. Press down the dried limes with back of a spoon. Take the pan off the heat and let the syrup comes to the room temperature.

  4. Strain the syrup before using. (keep that in mind the more dried limes stay in the syrup, the taste will be stronger. So you can make the syrup ahead of time and let it sit in the fridge over night).

For the cocktail:

  1. Add all the ingredients into a cocktail shaker.

  2. Dry shake for 20 seconds, then fill the shaker with ice and shake it for another 30 seconds.

  3. Strain it into your favorite glass. Sprinkle some dried lime powder and flakes on top and enjoy.
